Freedom Food Coq Au Vin

A seasonal dish from Sainsbury’s with a certain je ne sais quoi… so why not warm your cockles and your conscience with a hearty Coq au Vin, using Sainsbury’s popular Freedom Food endorsed chicken?

Serves: 4 Preparation time: 15 mins Cooking time: 60 minutes

Ingredients
1 tbsp vegetable oil
1 pack Sainsbury's Freedom Food Endorsed Corn Fed Chicken Thighs & Drumsticks, 550g
125g unsmoked streaky bacon, cubed
1 large white onion cut into wedges
2 tbsp plain flour
Sainsbury’s Coq au Vin paste
200ml red wine
200ml water

Method
Preheat the oven to 180C/Gas mark 4, then heat oil in an ovenproof casserole dish. Brown the chicken, then set it aside. Brown the bacon and onion wedges, then stir in the plain flour and cook for 2 minutes.

Return the chicken to the pan with the Sainsbury’s Coq au Vin paste, wine and water and mix well. Cover and place in the oven for 45 minutes.

Once cooked, remove the chicken from the dish and keep it warm, then reduce the remaining sauce by simmering it on a medium heat on the hob.

Put the chicken on four plates and top with the sauce. Serve with a selection of green vegetables and slices of crusty bread.
