With re-fried beans
Here’s a very simple but very classic summer Mexican recipe, made from M&S ingredients, all available in store now.
Serves: 4 (as a starter). Preparation time: 5 minutes. Cooking time: 15-20 minutes
175g Lightly Salted Tortilla Chips
Spoonfuls of Re-fried Beans and new Red Salsa
150g of grated Cheddar cheese
Half a finely sliced small red onion
One de-seeded chopped tomato
Heat the oven to 200°C/400°F/gas 6 (180°C for fan ovens)
Layer up 175g Lightly Salted Tortilla Chips in an ovenproof dish with spoonfuls of Re-fried Beans and new Red Salsa, 150g of grated Cheddar cheese and
sliced Jalapeño Chillies to taste. Add half a finely sliced small red onion and one de-seeded chopped tomato.
Bake for 15-20 minutes or until the cheese melts. Serve immediately sprinkled with fresh coriander. Job done. Dig in with three friends.
